HAPPY SPRING! Easter is right around the corner. We are very excited to pair up with Brent and Kira Olsen from Olsen Farms for our Easter Hams this year! This very recognizable couple whom a lot of you will recognize from the Seattle farmers markets are the real deal. They raise beautiful pigs, cows and lambs as well as a variety of potatoes out on their farm in Colville, WA. Not only do they raise their animals, but they also own their own processing facility, smokehouse and sell their own products! We have sold Olsen’s meats from time to time throughout the years and when I found out about their smokehouse, I was very eager to feature their hams for the Easter holiday. They have told me that they brine cure the hams for about 7 days and smoke them with a variety of hardwoods for about 10 hours. The flavor is undeniably good and not overly smoky or salty.
